What is the difference between a non-stick pizza pan and other types of baking pans?

1. Material and surface treatment of non-stick pizza pans
Non-stick pizza pans: mostly made of aluminum alloy or carbon steel substrate, with PTFE, ceramic coating or anodized aluminum film on the surface. This design not only ensures uniform heat conduction, but also achieves anti-stick effect and reduces the use of grease. The non-stick coating achieves a low friction coefficient through a high-temperature spraying process.
Ordinary baking pans: usually made of pure aluminum, stainless steel or galvanized steel, with no special coating on the surface, relying on grease or baking paper for anti-stick. Ordinary aluminum baking pans are prone to leaving cutting marks and are prone to oxidation after long-term use. Traditional baking pans rely on physical polishing to improve surface smoothness, and the anti-stick effect is weak.

2. Function and design
Non-stick pizza pans use coating or anodizing to make food easily demoldable, especially suitable for novices and low-oil healthy baking. Ordinary baking pans rely on powdering or greasing paper, which is cumbersome and easy to fail.
The aluminum alloy material of the non-stick pizza pan has a high thermal conductivity (about 160 W/m·K), and the uniform coating reduces local overheating. Ordinary aluminum pans conduct heat quickly but are easy to oxidize, while carbon steel pans conduct heat slightly slower but have strong heat storage, making them suitable for long-term baking. Square baking pans are suitable for making American thick-bottomed pizzas because of the large thermal gradient at the four corners.

3. Maintenance and life
Non-stick coatings should be avoided from being scratched by metal tools. It is recommended to wipe with warm water and a soft cloth. Anodized aluminum pans are highly wear-resistant and can withstand mild detergents.
Ordinary aluminum pans are prone to scratches and need to be polished regularly after oxidation; carbon steel pans need to be dried to prevent rust, and the maintenance cost is relatively high.
